Option 1: Go to Start > Gear Wheel (Settings) > Windows Update > Change Active Hours
Confirm that this is ENABLED, and set your time of active hours for your daily work routine.
Windows will attempt to not restart during this time frame.

Option 2:   Go to Start > Gear Wheel (Settings) > Windows Update > Pause updates

You can pause updates for up to 5 weeks at a time. This gives you the opportunity to install updates on your schedule.

Option 3:   Got to Start >  Gear Wheel (Settings) > Advanced Options
Make sure you have "Restart this device as soon as possible when a restart is required" disabled.
Then "Show a notification when your PC requires a restart to finish" enabled.
